My good friend Brooke made me these quesadillas for lunch today, and they were too good not to share! They were super easy and perfect for a quick 10 minute lunch! I don’t know about you, but I like when recipe posts are as simple and precise as possible! I don’t like reading through pages of directions so I try to make all the recipes I post on here as simple as possible! Enjoy! ♥
Here are the ingredients she used:
shredded cheese
corn
black beans
bell pepper
creamy chipotle ranch dressing
…and can’t forget the homemade guacamole! Avocado would do just fine on its own if you don’t have time to make guac!
Put your tortilla in the pan, and let it cook until large bubbles accumulate. Spread chipotle ranch onto one half of the tortilla, and guacamole on the other. Then, add the other ingredients as desired.
Fold the quesadilla over and cook it on both sides until lightly golden.
Add some chips and a side of fruit and you’re set with a delicious lunch!
