Apple Crumble Muffins

These muffins ended up being absolutely delicious! I’m not going to lie, they weren’t as quick and easy as I had hoped they would be, but boy were they absolutely delicious! Give them a try!

MUFFINS

  • 1/2 cup softened to room temperature
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 and 3/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup milk
  • 2 cups peeled, cubed, apples

Crumb  Topping

  • 1/3 cup packed light brown sugar
  • 1 1/2 Tablespoon granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 cup melted butter
  • 2/3 cup flour

Glaze  Topping:

1 cup powdered sugar

3 tablespoons milk

1/3 teaspoon vanilla extract


Directions: Preheat the oven to 425 degrees fahrenheit. For the muffins, mix the wet and dry ingredients in separate bowls (except for the apples). After the ingredients are mixed separately, add in the wet ingredients and stir until completely mixed.

From there, fold in the cubed apples. Once this mixture is complete, pour it into your muffin tin. For the crumb topping (which is cooked on top of the muffin mixture, mix together the ingredients until crumbly texture is achieved. Pour the crumb mix over the muffin mix.

Bake the muffins for about 7 minutes at 425 (This allows the crumb topping to cook and get a bit of a crispy texture), then turn the heat down to 325 and cook for another 20-25 minutes. When you pull them about of the oven, adding the glaze right away will cause it to melt right into the muffin… and I found that this is absolutely delicious!

Sprinkle some powdered sugar on top, and vuela!!
